Werner Snoek Q&A

Acclaimed local chef Werner Snoek, the Executive Chef at Toadbury Hall, was one of the creative and passionate contributors to this year's House and Leisure Food issue. To celebrate the issue going on sale, we recently chatted to him about all things food related and got the scoop on his foodie secrets. What food trends do you think will be big in 2012? I think that old school classics are slowly coming back into kitchens, but they are being presented in a more modern way, with simple twists that don't change the original completely. Diners also are more aware of the food they are eating and are supporting the 'green' way of eating. Best part of working on the 2012 HL Food issue? The fun in the kitchen with the photo shoot, posing, and eyeing the camera lens. Which fellow local chefs do you admire? Bertus Basson, David Higgs, Klaus Beckman, Nicolas van der Walt. Favourite food blog? I enjoy Union Food and Drink. Favourite local food market? Food Lovers Market, Jasmine, Michael Mount Organic Market. The one dish that you think screams 'summer'? My chef’s salad. If you could have any superpower for a day, what would it be? Power of persuasion. If you weren't a chef, you'd be? A super hero. Best childhood food memory? My mother’s roast chicken and gravy, roast potatoes and veggies. To find out more about Werner's foodie pursuits or to get in touch, visit toadbury.co.za.
