Recipe: Bitter-Sweet Wintery Citrus Salad

Bitter-Sweet Wintery Citrus Salad | House and Leisure

This citrus salad features bitter-sweet grapefruits plus the sweet tang of oranges, then combines these with the peppery and bitter flavours of radicchio to create a dish that is both restoring and refreshing. And of course, it also packs a massive punch of vitamin C. 

Serve it alongside grilled chicken – or with a spicy rack of ribs if you're having a mid-winter braai.

Bitter-Sweet Wintery Citrus Salad

Ingredients

  • 2 grapefruits or blood oranges
  • 2 oranges
  • 2 satsumas, peeled
  • 2 easy peelers (like naartjies), peeled
  • 1 cup shredded radicchio leaves
  • ½ a shallot, finely shaved
  • Micro herbs, to garnish
For the dressing
  • ¼ cup vincotto
  • 1T chopped capers
  • 1T lemon juice
  • 2T olive oil
  • Pinch of salt

Method

Peel the grapefruits and oranges with a sharp knife and remove excess pith.

Cut all the citrus into thin rounds.

Place on a platter and scatter with the radicchio, shallot and herbs.

Place the dressing ingredients into a jar, shake, and serve with the salad.
