Its 90morganic rooftop garden is home to 42 raised wooden planters that house a healthy variety of herbs, vegetables and edible flowers. The garden supplies the majority of the hotel and conference centre’s daily herbal culinary needs and feeds executive chef Simon Kemp’s hybrid-cuisine style admirably. His passion for growing fresh produce is shared by the staff, who are all for getting their fingers dirty in support of the hotel’s commitment to reducing its carbon footprint.
