Apple and Green Fig Samoosa Recipe

Recipe Christine Capendale Ingredients:

  • 1 tin (385g) sliced pie apples
  • 10 ml brown sugar
  • 2,5ml ground cinnamon
  • 10ml honey
  • Grated rind of 1 small lemon
  • 100ml chopped preserved figs
  • 6 sheets phyllo pastry
  • 100ml melted butter
  • Cinnamon sugar or icing sugar to dust
Directions: Preheat the oven to 180°C. Grease a baking sheet. Mix the apples, brown sugar, cinnamon, honey and lemon rind together. Add the chopped figs. Brush a sheet of phyllo pastry with melted butter. Place a second sheet on top and brush with more butter. Cut into four long strips and place a spoon of filling on the bottom left-hand corner of each strip. Roll up like a triangle. Repeat with the rest of the phyllo sheets. Place the samoosas on the prepared baking sheet and brush with butter. Bake for about 15 minutes. Dust with cinnamon sugar just before serving.
