Strawberry, Orange And Gin Cordial

Ingredients 250g strawberries, hulled 3T sugar 1T orange-blossom water 500ml gin tonic water, to serve fresh lime or lemon, to serve ice, to serve Method Blitz the strawberries and sugar in a blender, then strain the juice a couple of times to remove the pulp. Add the strawberry juice and orange blossom water to the gin and leave it in the fridge until you are ready to use it. Serve the gin with tonic water and fresh lime or lemon over ice. MAKES 500ML

Rosé Sangria

Ingredients 1 orange 1 lemon 1 apple, cored 14 cup brandy 1 cup orange juice 1 cinnamon stick ice 750ml rosé 750ml ginger ale Method Slice the orange, lemon and apple into thin slices and place them in a large jug. Add the brandy, orange juice and cinnamon stick and refrigerate overnight to allow the flavours to infuse. To serve, add lots of ice to the jug, pour in the wine and ginger ale and serve ice cold. SERVES 8–10

Raspberry Fizz

Ingredients 125g raspberries 12 cup Cointreau or any orange liqueur 12 cup brandy 2–3 bottles of champagne Method Refrigerate the raspberries overnight in a container with the Cointreau and brandy. Spoon a few raspberries and the refrigerated juice into a champagne flute and top up with champagne. SERVES 10
