As a result, cool sea breezes sweep across the vineyards allowing the grapes to ripen slowly, gaining complexity with time, and character from their very unique climate. The vines are planted over 18 different soil types, and as a result, the flavour profiles of the single vineyard wines differ markedly from one vineyard to the next. Most of the wines are given the names of indigenous flora on the farm.
