Seared Fillet Recipe

  • 4 x 200g beef fillet steaks
  • 15ml olive oil
  • 1 onion, chopped
  • 3 cloves garlic, coarsely chopped
  • 10ml finely chopped chilli
  • 125ml Amarula
  • 60ml tomato purée
  • 250ml beef stock
  • 45ml red wine or red vinegar
  • 30g dark chocolate
Directions: For the sauce: Heat the oil in a heavy-based saucepan and sauté onion, garlic and chilli for about 2 minutes.  Add the Amarula, tomato purée, beef stock, red wine or red vinegar and dark chocolate and stir well. Simmer over low heat for about five minutes and set aside. For the fillet: Cover a griddle pan with some olive oil and heat until piping hot. Grill the steaks for three to four minutes per side until medium-rare (depending on the thickness of the steaks). Serve covered with the chocolate chilli and Amarula sauce, with a side salad. Serves 4
