The San Pellegrino World’s 50 Best Restaurants has been announced with one of South Africa’s great restaurants amongst them.
The Test Kitchen by Chef Luke Dale-Roberts was recognised as one of South Africa’s best, coming in 28th in the list of 50, with mostly European names dominating the top 10.
“I am thrilled, as we have been working hard at The Test Kitchen over the past year, experimenting with new techniques, focusing on getting everything near perfect while still keeping our playful edge,” Dale-Roberts was quoted as saying in a statement.
The restaurant made major progress from 48th position in 2014 to 28th is year.
Dale-Roberts is best known for his experimental take on food, with a recent focus on fermentation. Ingredients such as exotic kombucha, a fermented tea, and local South African amasi get centre stage at The Test Kitchen.
The chef will also soon be opening a new concept kitchen called Naturalis where he will experiment with interesting methods and techniques, to best showcase his experimentation to guests in a more intimate manner.
El Celler de Can Roca in Spain was named the top restaurant at the awards, pushing out Copenhagen’s Noma which dropped to third, behind Osteria Francescana in Modena, Italy.
Encouragingly, restaurants from emerging markets India, Dubai, Korea, Russia and of course, South Africa were named in the top 50, with those in South America and Asia also featuring.
However, there were few female chefs featured this year and though the Veuve Cliquot World’s Best Female Chef award went to Chef Hélène Darroze, none of her restaurants featured in the top 50. This and the selection process has been the subject of ongoing criticism. According to the New York Times, critics have called for the awards selection and judging process to be made more transparent. However, the World’s 50 Best Restaurants Awards has increased its scope and reach since its first awards in Britian 2002.
