Vegan flapjack stack

11⁄2 cups Wellness rolled oats 1 cup Almond Breeze almond milk 1 ripe banana 1⁄2t cinnamon 1t Wellness chia seeds 1⁄2 cup Le Coquin coconut milk yoghurt 1t baking powder 1t coconut sugar, plus extra for garnishing Berries, for garnishing Maple syrup, for garnishing


Blend the rolled oats in a food processor until they have the consistency of flour. Add the rest of the ingredients and process until smooth. Place a pan over medium heat and add the coconut oil. Add three tablespoons of the batter to the pan. When they start to bubble, flip over the flapjacks and allow them to cook on the other side. Repeat until all the batter has been used. Stack and garnish with coconut sugar, berries and maple syrup (or other toppings of your choice).
