Steri Stumpie Doughnuts

for the glaze 80g milk chocolate ⅓ cup chocolate Steri Stumpie flavoured milk 1T Nachtmusik Chocolate liqueur (optional) 6 plain doughnuts for the filling 160g milk chocolate ⅓ cup cream ⅓ cup chocolate Steri Stumpie flavoured milk 100g butter

method

To prepare the glaze, melt the chocolate in a bowl with the flavoured milk in the microwave, in 15-second bursts, stirring in between until the chocolate has melted and the mixture is smooth. Stir the Nachtmusik through the mixture and place it in the fridge for an hour to thicken. Cut the doughnuts in half horizontally and set them aside on a lined baking tray. To prepare the chocolate filling, melt the chocolate in a bowl with the cream and flavoured milk in the microwave, in 15-second bursts, stirring in between until the chocolate has melted and the mixture is smooth. Stir the butter through the mixture until it has melted, then place the mixture in the fridge for one-and-a-half hours until it has cooled and thickened. Beat the mixture with an electric beater until it is pale and creamy. Spoon it into a piping bag and pipe it on the bottom half of the doughnuts. Place the tops back on and drizzle the glaze on top. SERVES 6
