Salty Salt River Dog Cocktail

My current favourite gin cocktail is the Salty Salt River Dog, which is a grapefruit based cocktail made using our Salt River gin.
Ingredients50ml Hope on Hopkins Salt River Gin 100ml freshly squeezed grapefruit juice, from a large pink grapefruit 25ml fresh lime juice 25ml thyme infused simple syrup (see below for how to prepare this) For the garnish Either a pinch of rock salt and a sprig of thyme or a wedge of lime for the thyme simple syrup 100ml sugar 100ml water 8 sprigs of fresh thyme
MethodTo prepare the thyme simple syrup Put the sugar and water into a small pot on the stove and stir over a medium heat until the sugar is dissolved. Remove from the heat, add the thyme sprigs and steep for 15 minutes, then strain. To make the cocktail Pour the grapefruit juice, Salt River Gin, lime juice and thyme syrup into a cocktail shaker. Fill the shaker with large blocks of ice. Stir thoroughly until chilled and strain into a glass filled with ice. Add a pinch of salt to the drink and serve with a sprig of thyme or a wedge of lime. Alternatively you can salt the rim of the glass before pouring.
