The recipe below was supplied by Fairtrade South Africa, a company that aims to encourage sugar lovers to choose Fairtrade-certified chocolate (like the Cadbury Dairy Milk in these bites) in order to save the dying cocoa industry. The poor conditions and low wage that cocoa farmers are currently subjected to is resulting in a huge decline in people going into this line of work, which could result in a global shortage of cocoa within the next five years.

100g unsalted butter
175g Cadbury Dairy Milk plain, broken up into pieces
2T golden syrup
125g Rich Tea biscuits, broken into small pieces
25g mini marshmallows
75g shelled pistachio nuts*
2T icing sugar (optional)
Grease two baking sheets.
Melt the butter, chocolate and syrup in a bowl over a pan of simmering water.
Remove from the heat and add the biscuits, marshmallows and nuts, stir well to make sure everything is covered in chocolate.
Place small mounds of the mixture onto the baking sheets and refrigerate for two to three hours or overnight.
Dust with the icing sugar.
*Instead of pistachio nuts, you could add chopped cherries.
