Recipe of the Month: Plum Caipirinha Lollies

  • 4 ripe plums
  • 2 ripe peaches
  • 1 pineapple, peeled
  • 1 thumb ginger
  • 1T lime juice
  • 100ml cachaça
  • 1t maple syrup

Place three of the plums, one peach and half the pineapple and ginger into a juicer and juice. Stir in the lime juice, the cachaça (the measurement can be adjusted according to how strong you would like it) and the maple syrup.

Dice the rest of the fruit and spread it evenly into ice lolly moulds then pour the juice mixture into the moulds and place in the freezer. When the mixture is semi-frozen, place the popsicle sticks in the middle of each of the lollies and allow them to freeze completely.
