• 1 onion, chopped • 1T olive oil • 1T butter • 3 apples, peeled and chopped • 60ml water • 1/2t salt • 1/2t cayenne pepper • pinch of turmeric • 1t whole-grain mustard • 125g caster sugar • 150ml vinegar • 2cm knob of fresh ginger, finely chopped • 4 pork chops • salt and pepper for seasoning
In a medium frying pan, sauté the onion in the olive oil and butter until just tender. add the apples and the water, and simmer for a few minutes. add the salt, cayenne pepper, turmeric and mustard, and half the sugar and vinegar. simmer for 15 minutes. add the ginger and the remaining sugar and vinegar, and cook until the relish has thickened. Cook the pork chops as desired (pan-fried is recommended), season with salt and pepper, and serve hot with the relish on the side. Serves 2 or 4, depending on portion
