Popsicles, two ways

Make your own fast frozen treats at home with two simple recipes for summertime ice lollies. Both recipes make four popsicles each, and you can increase or decrease the amounts depending on what kind of mould you are using.

caramelised pineapple popsicles


1 medium-sized pineapple, peeled and cut into chunks

2T sticky brown sugar

1x400ml tin coconut milk


In a saucepan, combine the pineapple with the brown sugar and heat until the fruit is sticky and soft. Allow the caramelised pineapple to cool before stirring into the coconut milk and pouring the mixture into four popsicle moulds. Freeze until solid.

Serves 4

chocolate-chip popsicles


200ml dark chocolate ganache

50ml dark chocolate chips

200ml full-cream plain yoghurt


Spoon 50ml chocolate ganache into the tips of four moulds, followed by the chocolate chips. Pour in the yoghurt and freeze until solid.

To unmould the popsicles, simply run a little warm water over the plastic mould and they should release.
