250g shaved ham
2T butter, plus extra
4 slices of toasted sourdough bread, to serve
sea salt and cracked black pepper
Place ham on a lined tray under the grill until just crisp and golden. Set aside and keep warm.
Heat half the butter in a large non-stick frying pan over medium heat. Crack in two eggs and fry until cooked to your preference. Remove from the pan and repeat with remaining eggs.
To serve, butter the toast and top with ham and eggs.
