Granola with Glazed Plums

For the glazed plums 350g plums, halved 1T butter 2T caster sugar For the granola 2T honey 2T oil 2 cups oats 2t cinnamon ¼ cup almonds ¼ cup shredded coconut ¼ cup pumpkin seeds ¼ cup sunflower seeds 250g canned diced apple ¼ cup pistachios ½ cup cranberries natural honeycomb, to serve milk or natural yoghurt, to serve

method

Preheat oven to 180°C. Grease and line a large baking tray. To prepare the glazed plums, place all the ingredients from this part of the recipe in a large non-stick frying pan over medium heat for five minutes. Reduce the heat to low and cook a further five minutes or until plums have softened. Melt the honey and oil in a saucepan over medium heat. Set aside to cool. In a large bowl mix the remaining dry ingredients. Add the apple and the honey mix, and stir to combine. Spread evenly on the baking tray, cook for 10 minutes in the oven, stir and then bake for a further 15 minutes or until crisp and golden. Allow to cool, stirring in the pistachios and cranberries. Serve the granola and plums with natural yoghurt or milk and honeycomb. The granola will keep for up to one month if stored in an airtight container.
