If you’re looking for a refreshing spring aperitif, this frozen grape and fennel frappé with sparkling wine by chef Jacques Erasmus of Hemelhuijs is the perfect accompaniment to the new season.

500g fresh green seedless grapes, stems removed
1/2 fennel bulb, thinly shaved
750ml dry sparkling wine, chilled
Freeze the grapes and half the shaved fennel. Once frozen, blend into an iced paste and spoon into serving glasses. Top with well-chilled sparkling wine and the remainder of the shaved fennel, and serve immediately.
