Frozen grape and fennel frappé with sparkling wine

If you're looking for a refreshing spring aperitif, this frozen grape and fennel frappé with sparkling wine by chef Jacques Erasmus of Hemelhuijs is the perfect accompaniment to the new season.
frozen grape and fennel frappé with sparkling wineIngredients 500g fresh green seedless grapes, stems removed 1/2 fennel bulb, thinly shaved 750ml dry sparkling wine, chilled Method Freeze the grapes and half the shaved fennel. Once frozen, blend into an iced paste and spoon into serving glasses. Top with well-chilled sparkling wine and the remainder of the shaved fennel, and serve immediately. SERVES 6
