Cauliflower Tabbouleh



½ a medium cauliflower, remove stalk ½ lemon, juiced 1 clove garlic, finely chopped 2 tbsp olive oil ½ red onion, finely diced 4 tbsp mint, parsley, dill 1 tbsp pistachios or walnuts, finely chopped ½ pomegranate, seeds pinch of salt and pepper


Put the cauliflower florets into a food processor and blitz to a couscous like texture. Combine the cauliflower with the rest of the ingredients. Season to taste. Serves 4
