If you are want to preserve summer a little longer or looking for a delicious drink – this quince bellini will definitely hit the spot.
Prep time: 15 minutes / Cook time: 10 minutes / Serves: 6
2 quinces, peeled and cored
pinch of salt
75g white sugar
750ml Prosecco or sparkling wine, well chilled
250ml soda water
Place quinces and salt into a saucepan and add a cup of water. Cover with a lid and simmer until quince is soft. Add sugar and cook another two or three minutes. Allow quince to cool, blend to a smooth purée and strain through a fine sieve.
Place cooled quince purée into a large jug and add a few handfuls of ice. Slowly add soda water and Prosecco, and stir gently. Remove ice, pour into tumblers and serve immediately.
