Pork wonton soup recipe

Recipe Larry Steenkamp Styling Raphaella Frame Photograph Sean Calitz Ingredients: 2 cups lemon juice chilli powder 4 chillis, sliced ± 1kg pork shoulder 1T garlic flakes 1T cayenne pepper 1T sweet paprika salt 1t oil juice of 4 limes 4 garlic cloves, chopped 4 bird’s eye chillis, finely chopped 1 knob of finely grated ginger 3t fish sauce 2t caster sugar 2 spring onions, finely chopped wonton wrappers 1 litre vegetable stock 1/4 cup soy sauce 2 drops sesame oil 1t chilli paste 4 garlic cloves, roasted a handful of fresh coriander 2 spring onions, chopped 100g tatsoi 200g Asian mushrooms, fried Directions: Combine the lemon juice, one teaspoon of chilli powder and the sliced chillis in a bowl, whisk thoroughly and pour over the pork shoulder. Refrigerate and allow the pork to marinate overnight. Preheat the oven to 180°C. Combine the garlic flakes, cayenne pepper, one tablespoon of chilli powder, paprika, one teaspoon of salt and oil in a bowl, mixing well. Using a clean cloth, wipe the marinade off the pork and apply the rub evenly over the skin. Place the shoulder on a large baking tray and roast for about three hours. Remove from the oven, allow to rest for 40 minutes, then pull the pork from the bone. Finely dice the meat and fat, and place in a large bowl. In a separate bowl, blend the lime juice, garlic, bird’s eye chillis, ginger, one teaspoon of fish sauce, caster sugar and spring onions, and season with salt to taste. Add water to create a liquid consistency, and pour over the pork, tossing to combine. Spoon a teaspoon of the mixture into the middle of each wonton wrapper, and gather the corners, squeezing them together to form a purse shape. To make the broth, place the stock, soy sauce, sesame oil, chilli paste, two teaspoons of fish sauce and roasted garlic in a saucepan and simmer for 30 minutes.
