Elderflower and Lime Shortbread Stars Recipe

  • 100g softened butter
  • 50g caster sugar
  • 3T Bottlegreen Elderflower Cordial
  • 1 lime
  • 200g plain flour
  • 150g icing sugar
  • Silver balls and ribbon
Directions: Preheat oven to 180°C (160°C for fan assisted oven). Cream together the butter, caster sugar and 2T of the elderflower cordial and add the grated rind of the lime. Sift in the flour and mix to a dough, kneading lightly. Roll out on a lightly floured work surface and cut into stars approximately 7 - 8 cm in diameter. Place on lightly greased baking trays and cook for approximately 10 to 15 minutes until golden. Cool on a wire rack. Mix together the sieved icing sugar, the remaining 1T of elderflower cordial and enough lime juice to make a smooth, spreadable icing. Ice the biscuits and decorate with silver balls.
