David Grier's Ghanchaka Pizza

The 2013 celebrity chef series at Col'Cacchio is back - and this month, chef and adventurer, David Grier's Indian-inspired pizza is at the top of the menu. The pizza, called Ghanchaka, combines an Indian spiced mash potato base with chicken tikka, spring onion, coriander and chopped pineapple chilli salsa, served with a mint and coriander yoghurt. For every Ghanchaka pizza sold, R5 will be donated to the Children’s Hospital Trust. Here is a recipe for a basic pizza dough. Ingredients:  500g white bread or cake flour A pinch of salt 7g brewer’s yeast 2 tablespoons olive oil 325ml warm water 1 tablespoon castor sugar Directions: Sieve flour and salt into a large bowl or onto a big flat surface. Mix warm water, yeast, oil and sugar separately. Hollow out a well in flour mixture and pour fluid into the well, gradually mixing flour in from the sides with a whisk. Keep on mixing, until liquid is finished and you have a rough dough. Knead dough until smooth. Dust with flour, cover with a damp cloth and place in warming spot for 30 minutes to rise. Divide the dough into three parts, and roll out as thin or as thick as you like. Place on a baking pan (covered with foil and dusted with oil and semolina flour).
