Simonsig Estate is celebrating the 40th anniversary of its iconic Kaapse Vonkel – South Africa’s first Méthode Cap Classique – and with it, is inviting guests to indulge in a sensory sensation. This winter you’ll want to come out of hibernation with Cuveé’s hearty Cabernet Menu. Simonsig’s signature restaurant is offering delectable new dishes between May and the end of July. We caught up with Executive Chef Shanel Gildenhuys to find out what’s on the menu.
What inspired the Cuveé Cabernet menu? As the season changes and the weather gets colder and the evenings longer we start reminiscing about rich, slow roasted meat and venison dishes. The Simonsig Labyrinth Cabernet is the perfect accompaniment for such hearty and robust fare.
Signature dishes? The menu will be changing every week, but you can expect comforting wintry dishes, delicious venison, berry-inspired flavours and dark chocolate desserts.
Why is the Labyrinth Cabernet Sauvignon such a popular winter pairing wine? Still the noblest of all red cultivars, the darker warmer flavour and velvety tannin structure of the wine make it easy to pair with hearty foods.
Describe the homely ambience at Cuveé. It’s warm, comforting and inviting, resplendent with crackling fireplaces, and all manner of creative comforts. The decor is arty, modern and chic.
What is your secret to indulgent winter cooking? I always use the full intricate flavours of Simonsig wine as a canvas from which I design a food art experience.
