Creole-spiced Amarula & Mussel Chowder Recipe

Combined with Amarula, this delicious recipe will keep you warm this winter. Ingredients 30 fresh, scrubbed and debearded mussels 1 onion, peeled and chopped 2 finely chopped cloves of garlic 1t fresh chilli, chopped 3T butter 2T olive oil 250ml dry white wine 1t Cajun spice 1t whole peeled tomatoes 1 fresh tomato, deseeded and cut into cubes 2T lemon juice 125ml Amarula 2T parsley, chopped Directions: Sauté the onions, garlic and chilli in the butter and olive oil in a large, heavy-based sauce pan until translucent. Add the wine, Cajun spice, tomatoes, lemon juice and Amarula. Simmer gently for 15 minutes (until the tomato chunks disintegrate). Use a potato masher to break up any additional chunks. Now, take the heat up to high and wait for the sauce to boil. Then add the mussels, cover with a lid, shake the pan around a little, and leave it on the heat for about five minutes.
