ingredients
½ cup chopped rocket
¼ cup chopped parsley
¼ cup chopped basil
½ cup chopped mint
¼ cup chopped capers
5 spring onions, chopped
3 garlic cloves, crushed
zest and juice of 1 lemon
⅓ cup olive oil or to taste
1T red-wine vinegar or to taste
method
Mix all the herbs, spring onion, garlic, and lemon zest and juice in a bowl, and balance the flavour with a little olive oil or red-wine vinegar if needed. MAKES 2 CUPS
