recipe: lemon spritzers

Spring is in the air and that calls for refreshing, fruity beverages. Whether you're hosting a party or simply feel like something cool to sip on a hot day, this lemon spritzer is a great drink that the whole family can enjoy. Prep time: 10 minutes / Cook time: 20 minutes / Makes: 1½ cups of cordial  Ingredients:
  • 5–6 small lemons, zested and juiced
  • 400g white sugar
  • ½ cup water
  • sparkling or soda water
  • ice, to serve
Method: To make a lemon cordial, bring the lemon juice, zest, sugar and water to a gentle simmer for 20 minutes over a medium to low heat. Remove from the heat and cool slightly. Once slightly jammy and sticky, add a tablespoon or so to taste into the bottom of each glass or add 4T to a large pitcher. Pour in sparkling or soda water and stir gently until the cordial has dissolved. Serve with crushed ice and a sprig of mint or dried thyme.
