Recipe: Bitter-Sweet Wintery Citrus Salad
Brighten up your winter cooking repertoire with a refreshing dose of colourful citrus – and one of the easiest ways to do so is with this citrus salad.
This citrus salad features bitter-sweet grapefruits plus the sweet tang of oranges, then combines these with the peppery and bitter flavours of radicchio to create a dish that is both restoring and refreshing. And of course, it also packs a massive punch of vitamin C.
Serve it alongside grilled chicken – or with a spicy rack of ribs if you're having a mid-winter braai.
Bitter-Sweet Wintery Citrus Salad
- 2 grapefruits or blood oranges
- 2 oranges
- 2 satsumas, peeled
- 2 easy peelers (like naartjies), peeled
- 1 cup shredded radicchio leaves
- ½ a shallot, finely shaved
- Micro herbs, to garnish
For the dressing
- ¼ cup vincotto
- 1T chopped capers
- 1T lemon juice
- 2T olive oil
- Pinch of salt
Peel the grapefruits and oranges with a sharp knife and remove excess pith.
Cut all the citrus into thin rounds.
Place on a platter and scatter with the radicchio, shallot and herbs.
Place the dressing ingredients into a jar, shake, and serve with the salad.
