Beer Beef Stew with Colecannon Mash

- 1 kg beef shin
- 4 T olive oil
- seasoning
- 2 medium onions, roughly chopped
- 2 cloves of garlic, crushed
- 2 T tomato paste
- 2 sprigs of rosemary
- 3 sprigs of thyme
- 2 bay leaves
- 2 cups good quality beef stock
- 1 can of Guinness beer or stout
- 4 – 6 potatoes, skin on
- 125g butter
- 1 cup shredded cabbage
- 1 cup of shredded kale
- 1 cup of milk or cream
