¾ cup crunchy peanut butter
½ cup demarara sugar
½ cup caster sugar
1 large egg
1.5 cups cake flour
1t bicarbonate of soda
Preheat the oven to 190ºC and line a tray with baking paper.
Combine the butter, peanut butter, sugars and egg in a bowl and beat until well combined.
Sift the flour, bicarbonate of soda and salt into the mixture and incorporate until just combined.
Using a heaped tablespoon of biscuit dough at a time, roll into balls and place about 5cm apart on the prepared baking tray.
Bake for 12 to 15 minutes, until the biscuits are golden brown and the surface is cracked. Allow to cool on a wire rack.
