A little bit naughty, a little bit nice – this gin-based cocktail has a retro feel and a herbal base that cuts through the sweetness of grenadine with the fragrance of fresh sage.
Careless Whisper cocktail
20ml white sugar
10-15 fresh sage leaves, plus extra sprigs for garnishing
4 large grapefruits, juiced and strained (about 500ml)
200ml London Dry gin – we love local brand Hope on Hopkins‘ version
Indian tonic water
Prep time: 30 minutes + 1 hour chilling time / Cook time: 10 minutes
To make a sage syrup, place the sugar, water and sage leaves in a small saucepan and bring to the boil, stirring to dissolve the sugar. Once boiling, immediately turn off the heat and allow to cool.
Fill a large cocktail shaker with ice and pour half of the grapefruit juice into it. Add the gin and the cooled sage syrup and shake to combine. (If using a smaller shaker, you may have to do this in batches.) Fill four highball or whisky tumblers with ice and pour in the cocktail mixture until about three-quarters full. Top up with tonic water before carefully adding about 10ml of grenadine to each drink, so that it sinks to the bottom of the glass to create an ombré effect.
Garnish with a sprig of sage and serve immediately.
